Aging: 18-24 months in new French oak barrels + 12 months in bottle before going on the market. Color: Intense dark red, almost black, with violet or deep ruby reflections. Aromas: Complex and evolved — ripe red/black fruits (cherry, plum, blackberry, jams), fresh herbs, spices (pepper), vanilla, chocolate, light smoke, tobacco and leather notes over time. In the mouth: Structured, voluminous, firm but ripe and silky tannins, great concentration, juicy, with good acidity that gives freshness and a long, elegant and persistent finish. Powerful but refined, with excellent balance. Ideal pairing: Intense red meats (roast, chorizo steak, lamb), game, dishes with mushrooms, aged hard cheeses or cuisine with complex spices.
