Profundo began the era of “assemblages” in Argentina, wines from various varieties combined in different proportions, achieving a unique, complete and highly defined wine. The varieties that make it up are Malbec, Cabernet Sauvignon, Merlot and Syrah, produced in the department of Luján de Cuyo, aging in French and American oak barrels for 10 months. Profundo was stored in bottles in our cellar for 12 months to shape and refine its tannins, to enjoy an elegant, unctuous wine with a very long and memorable finish in the mouth. Intense ruby red color with purple hues and bright reflections, which reflect its concentration and vitality. Complex and elegant aromas, with notes of ripe black and red fruits (blackberries, plums, raspberries), accompanied by spicy touches (pepper, cloves), florals (violets) and nuances from oak aging such as vanilla, chocolate, coffee and a slight smoky touch. It may also present mineral and herbaceous notes. Balanced and structured entry, with soft and well integrated tannins. It offers a silky texture, good acidity and a medium to high body. The fruit flavors are combined with notes of oak, chocolate and a long, persistent and harmonious finish. Bressia Profundo Blend is a versatile and structured wine, ideal to accompany a wide range of dishes thanks to its balance between fruit, tannins and acidity. Pairing recommendations include: Red Meats: Perfect for cuts such as tenderloin, chorizo steak or Argentine roast. Its structure and tannins complement the juiciness and flavor of grilled or baked meats. Lamb: Harmonizes with roast or stewed lamb, especially if accompanied with herbs such as rosemary or wine reduction sauces. Empanadas: Ideal for meat empanadas or empanadas with intense flavors, since its fruity and spicy notes balance the seasonings. Mature Cheeses: Combines very well with hard cheeses such as Parmesan, aged Gouda or Manchego, highlighting its oak and fruit notes. Dishes with Mushrooms: Excellent with mushroom risottos, mushroom sauces or meats accompanied by mushrooms, since their earthy and spicy notes complement each other.
