Tasting notes & pairing
The nose offers great complexity, where aromas of ripe black fruits, violets, graphite and delicate mineral notes predominate, complemented by elegant memories of cocoa, tobacco, sweet spices and a subtle toast provided by its aging in French oak barrels. In the mouth it is concentrated and precise, with a silky texture, fine tannins and a marked freshness that provides tension and balance. The characteristic minerality of the calcareous soils of Gualtallary accompanies a long, deep and persistent finish, faithfully reflecting the identity of this exceptional origin. Ideal for long-cooked meats, chorizo steak, rib eye, Patagonian lamb, game meats and matured cuts. It also perfectly accompanies mushroom risottos, pastas with intense sauces, hard cheeses and cuisine with deep flavors.
