The Catena family begins its second century as a wine producer in Mendoza, Argentina. The Adrianna vineyard, located at an altitude of almost 1,500 meters above sea level, is named after Nicolás' youngest daughter Catena Zapata. The soils of this plot are composed of calcium carbonate and marine fossils that covered the region millions of years ago. The calcareous layers provide good drainage and are rich in rhizobacteria, microorganisms that help the vine root withstand stress and absorb nutrients. Hence, the term “mundus bacillus terrae” or “elegant microbes of the earth. ” Adrianna Vineyard Mundus Bacillus Terrae Malbec 2020 from Catena Zapata
Color: Deep and bright purple, with violet reflections that denote its concentration and youth. Aroma: Intense and complex, with layers of ripe black fruits (blackberries, blueberries, plums), floral notes of violets and lavender, and a distinctive mineral character (wet stones, graphite, chalk). There are nuances of spices (black pepper, cloves), wild herbs (thyme, mint) and touches of French oak such as cocoa, tobacco and vanilla, contributed by its aging. Taste: In the mouth it is elegant, structured and vibrant, with a silky entry and a fresh acidity that balances its concentration. The tannins are fine, polished and velvety, offering a rich texture and a long, mineral and persistent finish with notes of black fruits, spices and a chalky touch. It is a wine of great depth and precision, with a unique energy derived from its terroir. Vinification: 100% Malbec from the Mundus Bacillus Terrae plot (living soil bacteria) in the Adrianna Vineyard, Gualtallary, Uco Valley, Mendoza, at 1,450 m altitude. Calcareous soils with active microorganisms that provide their distinctive character. Fermentation with native yeasts, cold maceration and aging for 18-24 months in French oak barrels (70-100% new). HeAdrianna Vineyard Mundus Bacillus Terrae Malbec 2020 , with its elegance, minerality and sophisticated structure, is ideal for dishes that highlight its complexity and depth: Premium red meats: Ojo de bife, chorizo steak or grilled loin, where the fine tannins and ripe fruit complement the intensity of the meat. Game meats: Venison, deer or wild boar, with red fruit or spice sauces, which harmonize with the floral and earthy notes of the wine. Lamb: Baked lamb ribs with rosemary and garlic, or a Moroccan tagine with plums and almonds, highlighting the spicy and herbal notes of Malbec. Mature cheeses: Parmesan, Tuscan pecorino or aged gouda, which combine with the minerality and oak nuances of the wine. Dishes with truffle or mushrooms: Wild mushroom risotto with black truffle, or a pasta with porcini sauce, where the minerality and earthy notes of the wine shine. Sophisticated Creole cuisine: Knife-cut meat empanadas with chimichurri, or a well-spiced locro, connecting with the Argentine character of the wine. Desserts with chocolate: Dark chocolate fondant (70% cocoa or more) with red fruits, which highlights the cocoa and spice notes of Malbec.
