Catena wines are the result of special cuts from different vineyards of the Catena family, made by Laura Catena, fourth generation of winegrowers, and Alejandro Vigil, Chief Winemaker of Catena Zapata. Although Catena wines can be consumed upon release, they have proven to have wonderful aging potential of between ten and twenty years. After several decades of study and research into the different high altitude microclimates of Mendoza, the Catena family has identified the best areas for planting the family's vineyards. Color: Dark ruby red with intense violet reflections. HeCatena Malbec 2022 , with its intense, balanced and voluptuous character, is very versatile for pairings. Some recommendations include:Red meats: Perfect with grilled cuts of beef, such as chorizo steak, rib eye or roast, since its structure and tannins complement the intensity of the meat. Lamb or goat: Its fruity and spicy profile harmonizes with the richness of these meats. Paella: The spicy flavors and concentration of the wine enhance the ingredients in this dish. Hard and spicy cheeses: Such as Parmesan or Reggianito, which combine with the silky texture and earthy nuances of Malbec. Dishes with intense sauces: Pastas with ragù or tomato tuco, where the acidity and fruit of the wine balance the richness of the sauce. Spicy stews: Like lentils or beans, which highlight the spicy notes of the wine. Grilled vegetables: A lighter option that complements the freshness and balsamic nuances of Malbec. Aroma: Intense aromas of ripe black fruits such as cherries, plums and blackberries dominate, with notes of toasted spices, graphite, vanilla and a subtle touch of black pepper and chocolate. Floral and earthy nuances are also perceived that provide complexity. Taste: In the mouth it is juicy, concentrated and well balanced, with soft and silky tannins. It has an enveloping texture, fresh acidity and a long, tasty and persistent finish. Preparation: This 100% Malbec comes from historic vineyards of the Catena family in Mendoza, at altitudes of 920-1,450 meters. A pre-fermentation cold maceration is carried out at 8. 8°C for 5 days, followed by a 10-16 day fermentation with indigenous yeasts and a 19-22 day post-fermentation maceration.
